Easy, healthy recipes, December 25, 2009
I absolutely love this cookbook. I've made most of the recipes it contains and all - with the exception of the chicken salad with green beans (too lemony) - were excellent. Most recipes are really easy and the book is peppered with little tidbits of information that will help you prepare other meals in a more healthy fashion. The salmon cakes, ratatouille tart, spaghetti with turkey meatballs, pork medallions with cherry sauce (made with dates instead), sage-rubbed pork chops, chicken pot pie, Tuscan roasted chicken, and turkey roulade recipes are my favorites.

I bought this book after reading all the positive reviews on this site. For the past two weeks I have only been using this cookbook for cooking all of my meals and I feel so healthy and my skin is glowing. Some of the people I work with commented on how well I was looking yesterday and I really think it is because of the healthy food I've eaten from this cookbook. I've had the delicious nutty granola for breakfast, energy bars for snacks and tasty dinners including the fettucine with creamy red pepper sauce and aromatic noodles with lime peanut sauce.
Most of the recipes are for at least four people and at the moment I'm only cooking for one person but I have just divided the recipes and they have all still turned out well. I have ordered Ellie's second cookbook and I'm really looking forward to trying out the recipes from that book as well.

Before buying this book, I read the many positive reviews available. I was not disappointed. This is an excellent cookbook with a variety of healthy receipes. I have enjoyed every receipe but my favorite is Chicken Pot Pie with Phyllo Crust. Ummm
Awesome for Diabetics & Those Watching their Weight, November 29, 2009
I have a serious love for Ellie Krieger. I watch her shows when she is on the Food Network. Her recipes are so simple and natural. What I love the most is that she tells you what good properties the foods have and what to substitute if you don't like something in the recipe. She also breaks down the nutritional values for each recipe. The pictures of the recipes are delicious and lovely, just like Ellie!

This is an excellent book. I would definitely recommend it, especially if you are wanting to cook something with fewer calories. The recipes are very good and easy to prepare.
